Celeriac Dauphinoise

Celeriac Dauphinoise
1 celeriac peeled and sliced thinly
200mls of double cream
salt and pepper
sliced onion or leek
Grated mature cheddar

Great accompaniment to most meals.  Thanks to Sally and BIWI for this recipe.  This picture is what i made, i added a bell pepper and courgette, you could add onion and garlic – change it to suit your carb intake!

butter an oven proof dish, layer slices of celeriac and slices of leek or onion, add a bit of salt and pepper, pour over cream, top with grated cheese, cook in middle of medium oven for 1 hour (till cheese is golden and a fork will got into the celeriac easily to make sure its soft).
