Miniature Pancakes



ok, i kinda just made this up as i went along.  but it tasted great

i like thin pancakes and these are almost crepe like

3 eggs

100ml cream – i used single cream as it was all i had

and 2 tblsp of water – to lessen the eggy omletty taste and texture

the key to this is in the cooking.

you cannot make a huge pancake, the consistency will not hold for you to be able to turn them over, they are too delicate.

after about 3 mushy tries, i decided to  just  add to frying pan  in small portions, about 2 tblsp

jif lemon juice & splenda to taste

now, if i have worked this out correctly.

google tells me that 100ml of  jif lemon juice is 2 carbs

100ml cream is 2.2

splenda  tsp – 1 carb

all in all i reckon each pancake to be 0.5 carbs – if you sprinkle 1 tsp splenda over a few pancakes, if you come up with different calculations please let me know.

    They look great! Have you tried adding whey powder? Turns them into a bearable very low carb wrap that’s much cheaper than mama lupes.
