OMLETTE

I don’t like omlette therefore i have never made one… until today for my husband.  As i tend to only post what i myself have cooked, here is the recipe for the ham and mushroom omlette.

Carb value

eggs – 0

ham- 0

mushrooms x 3 – 2

total carbs =2

for one person

put 3 medium eggs into a bowl and bend together.  Do not whisk or beat…blend.

1 tbls of oil or butter in a 6-9 inch frying pan

heat it up until you think its going to catch on fire

pour in mixture and do not move the pan for 10 seconds.  the edges should go frilly.

THEN draw in the edge of the omlette towards the middle to allow the excess fluid fromt he top to go into the empty space.  keep doing this around your omlette until all the excess fluid is gone.

then this is your choice – if you want it a big moist – fold it and serve.

i need to know its cooked  – so with much effort and two spatulas i turned it over – you could ofcourse put in the grill.

my husband had two and says it was ultra filling.

low carb. low cost, i want to like them so much, my life would be so easy.

I find breakfasts a bit of a chore but I got this recipe from another site and I thought you might like it:

Muffeens (lots of ees because lots of egg)
    4 eggs
    1/2 cup ground almonds
    1/2 cup parmesan
    pinch baking powder
    salt and pepper

Mix everything together and divide into a greased muffin pan (makes 9-ish). Cook at 180 for about 10 mins until firm (don’t leave too long or they go really eggy. They freeze and microwave defrost surprisingly well
