Rhubarb and whipped cream

3 stalks red rhubarb – 3 carbs – i know the value varies from site to site, so i am airing on the high side i think)

10grams splenda – you can use more

200ml whipping cream – 3 carbs

approx = 6 carbs for two people

chop rhubarb into about 1 inch pieces, add to a pan with the splenda and 100 ml of water.

cook for 15 mins or until mushy

whip the cream
