Quesedillas

I love the word Quesedilla, but not as much as i love Quesedillas!

So no one told me that Quesedillas were fried tortillas.

I made a chicken curry, T’was delish! see recipes for Quick Chick Curry

then i made chicken curry Quesedillas –  it was amazing.

Using a Low Carb tortilla ( i use mama lupe from LC magastore)

the trick is to dry fry one side until it bubbles

flip it over then whilst the other side is doing, add your filling and fold whilst in the pan then cook each of the folded sides for a few more seconds.

i can’t tell you how gorg this is – its really really nice

each mama lupe tortilla  is 3 carbs

i use 2

Quick chicken curry is 11 carbs but it serves two people – so half it for one.

total 8.5

    I’m converted! I ordered those Mama Lupe tortillas and tried the recipe from the packet. I used two – grated cheddar and tuna on one, then threw another over the top and then flipped it once it had cooked a bit. Cut into quarters. Brilliant!

    i’ve been living off quesedillas since i discovered them a couple of moths ago.

    i never know that you fried tortillas to make them – ive been ordering the wraps for ages DUH!

    I made fajitas last night with sliced chicken thighs (cheaper than breast) green peppers, sliced red onion and a pack of Discovery Fajita Paste and used these tortillas. Rest of fam had ordinary carb laden ones. Slapped on some grated cheese and sour cream. Was gorgeous!
